I've spent the last day running this through my head and it's still not making any sense. I checked my camera again, which was running from when I left my house until about 13 minutes later when the car died. The temperature gauge didn't move at all once it was brought to operating temperature. It stayed right below half the entire time. I know I can't be crazy to believe that would have gone up while the engine seized up at 70MPH.

Basically I have that video that has the time on the cam and on my dash now showing any noise and the temperature gauge not moving, Motorist assist stopping 3-5 minutes after I was stopped, calling and logging the time, the motorist assist guy who is trained to identify reasons for a break down not even considering oil level based on the car's symptoms, phone records of calling the tow truck, records of motorist assist leaving the scene, records of when the tow truck driver arrived on the scene minutes later, and me following the tow truck to the dealer and putting the car on their lot as well as giving them the one and only key.

Based on all of that it leads me to 3 likely possibilities:
#1 The dealer is flat out lying to me about the engine.
#2 The dealer was changing the oil like they do on service jobs and accidentally started the vehicle without oil.
#3 Someone at the dealer or the guy I dealt with there knows or is related to police in the area (the same police that illegally towed my car and call me video boy to my face) and purposely "waited until the 3:30PM mechanic got in to take a look at it", had the oil drained, then ran it until it seized.
