The All Weather package, is an old plastic bag you tie to the windshield
you are better off wearing one of those ponchos from the dollar store
As for twin-engines, yes you would need to be an octopus to drive such a thing, two clutches two throttles two sticks
Unless you went automatic, that would actually make everything easy (easy to move two trannies on one auto-stick and the thottles pair up fine)
As for things going wrong, well it would have to be more reliable than a regular model, after all, when one engine is bad just use the second
Fuel economy would probably really suck though (10 mi/gal)
