The v1 restarts, and it does this in every car i've put it in to test it (3 in total so far). What in the world can I do to fix this?

Find the short & repair it. Start with the power cord.
what short?
it happens with every car i put it in.
I changed the phone cable too and it does the same thing
sounds like an internal short, and you may need to send it back in.
I would suggest running a setup like I have sitting right next to my laptop; 12v power supply hooked up to the hardwire kit. Once you set that up, shake the radar detector, see if it restarts. If it does go out, bad news, you have to sent the unit out (assuming all cords are good). If it performs flawlessly, then it must be your cigarette adapter.
its the cig adapter. He is using my V1 and many of times it does this when i hit a bump.
The plug in is poorly designed and comes very loose easily.

Hi justinkk2005,
I am thinking that its in the cigarette lighter plug. Probably just a single bad solder connection. If it isn't in the plug, then the most likely thing inside the V1 would be the solder connections for its RJ-11 jack. Still, I would put my money on the cigarette lighter plug.
My mom's car has this issue. . .
What I did is just tried to pull the metal out a little bit on the sides. . and then put a rubber band around above the metal(so it's not actually touching metal but still goes into the socket. . keeps it from moving around. . worked well for me.
