2 Pyrometers, one for each cylinder bank
    Boost Pressure
    Drive Pressure (Exhaust Manifold Pressure)
    Transmission Temp
    Transmission Line Pressure
Oil or Fuel Pressure (I move the sensor around)

For all the engine sensor inputs / engine control outputs I have Autoenginuity, a software and OBDII cable package that lets my laptop function as a full diagnostic scan tool.

I use Tweecer hardware and Minotaur software for engine tuning. I've been watching and waiting for 4 years for MS3 to debut since one has to have full sequential injection capabilities to run a diesel, and will probably get one when the beta testing is done and they release it to the general public.

    Boost
Dual wide-band O2s (one for each bank)
    G-force meter (1/8th, 1/4, 0-60, 60-0, turning, etc)
DashDAQ monitoring 12 digital feeds from the PCM including IAT, oil temp, tranny temp, spark retard/advance, coolant temp, etc.
Have calibrator level access to SCT's software, so no need for any special EFI tools... the PowerPC processor gives me more control than the aftermarket EFI tools do.

    Boost
    EGT
    Water Temp
    Oil Pressure
    Oil Temp
    Ignition Advance
    AFR
    O2

I have more but those are the ones I pay attention to.

I also track real-time and historic digital OBDII info when needed (extreme elevation changes at high speed, new fuel setup, seasonal changes, hot runs, long runs)

I bought a partially assembled MS2 and finished assembling it (I do PCB stuff at work) and never could get it to work, it just wont connect with my computer. I think I've decided to go with a Haltech F10A (fuel only standalone) since I already have a MSD BTM to pull timing. It wont be till around late spring or summer when I get things going anyways (turboing my truck) but I hope the Haltech is the trick...

I've got an Innovate LC-1 wideband I'll be using. As far as gauges, they're all pretty much the same, for water temp and oil pressure I just use cheap Equus gauges, they work fine.

I use Dipricol Optix series gauges, as they were a direct factory match to my gauges in my truck. Just have boost, pyro, tranny temp right now. Plan on getting fuel pressure, oil temp, and coolant temp soon.

I use my SCT and the livelink software to do real world datalogging, and I can monitor anything the PCM, ECM, or TCM can read through the OBD II port.
