Has anybody used a am/fm antenna coupler? This would allow me to use my stock car antenna without giving away the fact that I have a scanner.

The problem would be that your antenna isn't optimized for the frequencies that your scanner is hitting. Get a good multiband antenna and call it good.
I see what you a saying about not being the right freq. but I would think that anything on the outside would be better than the rubber duck I have on the scanner now. Guess I might have to get creative :-) Since I have XM I never listen to terrestrial radio, the antenna is useless to me. I could replace the antenna with a multiband, with some modification. Hmmm.. decisions, decisions......

It will only be better on high band, which is the frequency that your AM/FM is cut for. On higher and lower frequencies, it will probably be no better than the duck, and possibly worse. Unless you are in the city (as in LR), and never leave the city, you're not going to get decent reception out of the AM/FM coupler. The wooded and hilly terrain of most of AR kills reception and makes the best possible antenna necessary for consistent performance.
I used one for years and it worked pretty good on one of my cars. It's standard AM/FM antenna could be manually raised and lowered. I mainly listened to VHF low, and VHF high. So for those frequencies in general I left it at it's full length. If I had lived in an area with 800 MHz I would have lowered it to work better at higher frequencies.
